Bolt or Slade configuration questions

Hey, was wondering if people could help with a new build for a Halo or a Slade?

Budget: I had planned on a budget around $2,000, but can go up to $2,500.

Expectations: 2x 21:9 monitors at 1080p over Display Port, a 4k TV for streaming videos and some web-display through HDMI 2.0, and a separate integrated amp with built in DAC to run stereo sound. Eventually it will feed into a 5.1 or 7.1 surround sound AVR.

Usage: The rig will double as both a gaming rig (Diablo, Total War, Dark Souls), and as a H/T and media server. So aside from all the gaming goodies, I'll need to be able to stream HD audio and 4k video, as well as some work and web browsing that includes VOIP and extended video chatting.

Special Needs: I sent this separately to Alex, but I'll post here too.

The Bolt3 has caught my eye both for size and looks. But I have a few questions since this is the first system I've designed in about 20 years and I'm stuck with so many options.

1) Would I need 6 cores, or will a 4 core processor do? Someone had mentioned streaming might take up more CPU. It seems like going from the 6700 to the 5820 costs around the same.

2) Should I have a preference towards any particular mobo given the audio needs? The Bolt is kind of limited, but if I went with something like the Slade there are many more options. I'm assuming I won't need a separate sound card since the DAC is external.

3) I'm going with a GTX 970. But someone said there is a risk of having only one Display Port? How would I request a card with 3 Display Port jacks? Also, can someone verify that the GPU has HDMI 2.0?

4) I understand the Hydrolux PRO system that comes with the Bolt needs maintenance. how difficult is that? Also, would the Airflow Control be necessary on the Bolt if I were using the Vortex system?
