So I've started working on my first case mod... but was wondering, would the price/noise increase balance with the cooling capabilities with going with 6x 80mm fans compared to 2x 120mm fans?

Total air flow with matched dbs it will be pretty close. price wise it wil be cheaper to go with 2 x 120's, if you are comparing the same brand, model.
 
 It is not so much in the total air flow that counts. Air placement is crucial. Also it depends on the case. An open air case, you don't have to worry much about negative pressure occuring, but with a sealed up case, internal pressure becomes an issue. 
 What brand of fans are you looking at? Are you going to power them directly off the PSU, or off the MB, or a fan controller?
I have set up a few cases with a lot of fans in the past.. My big case has had up to 28 120mm's running inside of it before, but its not a standard PC. lol

It's on the front for intake.... yeah I know it's a little overkill, but 6 80mm look so freaking cool (Lol pun)... It has a lot of mesh, so exhaust isn't an issue...

And it really is a perfect fit for the 80s where I cut out... Idk lol.

Edit: Tbh, it's really about 'Wow' factor. Both will work perfectly fine.

Those would defiantly be nice, but I have a deal for $2 a fan, with red LEDs. Great reviews on them too.

Clap Wow.... That's damn near 4 square feet of fan! Not actual fan blades area, but still, wow!

well 6 of the smaller fans will generate just shy of 30 decibels... two of the 120s will generate almost 35 decibels

Your air flow will be significantly better with the smaller fans if there is not a back pressure problem.

If the CFM are accurate and you can make the mods your only loss point will be increased power consumption. You do not mention the power consumption but conservatively you can expect the six smaller fans to likely double your power needs for fans.

Not a huge deal unless you are already close on power.

One side note, fans at that cost are likely bargain bin, no name fans..

Might want to look at the fan type, single bearing fans tend to get noisy fast as they wear and have low MTBF... a decent fan is generally the same as a decent PSU 100,000 Hours.

They make multi-bearing, and fluid bearing fans that are generally quieter, spin faster and thus move more CFM for less dB...

Personally I like Scythe fans... like this one for $13, 120 MM and 60+ cfm for less dB than the 120s you posted.

Yeah, but Rosewill is starting, and think about it, Scythe, delta, Sanyo Denki and Panaflo were small unknown names at the beginning. Besides, they have stellar reviews and I've had good purchases with them.
