On systems DS builds using these coolers do they have the fans intake or exhaust air ?

I would hope, exhaust, meaning pushing through the fins and out the back. .

That is how it was on my first DS system that came with water cooling but Asetek Corsair and most info I have found on the Internet say intake so was curious on how DS sets them up now there has been a lot of changes since my first DS system

Almost positive it'll be exhaust. You really wouldn't want to dump the cpu cooling into the case. There have been times when DS has turned the fans In for some rads, usually the top mounted 240mm, because the cooling for the rad did better with the fresh outside air. The cases in those circumstances had enough air to handle it.
