Help with new build

Dear Forum,
I’m here asking for help configuring a system I wish to buy in a few days. I have created a couple of configurations that give you a sense of my budget and thoughts. I would appreciate your expert advice on going forward. Some details:

•This is my first custom build and the first time I’m purchasing a high performance machine
•I’m not a gamer
•I will be using FSX and Prepar3D heavily, hence the interest in single core speed
•I will also be editing videos quite a bit – mainly family videos for friends and family, hence the 6-core cpu. Videos may go up to consumer 4k
•I want to start CAD work with Autodesk products.
•I will be running a multi monitor setup – 3 x 1440p for the flight sim – not looking at 4k yet but want to keep the option open.
•Chose the GeForce 1080 to get maximum CUDA support for video editing, to keep 4K option open, and hope that Prepar3D will get there 

Questions that have occurred to me (I’m sure I should be asking questions that I don’t even know yet – hence putting all this on the table in front of experts!):

•Do I have a balanced build? Any changes you recommend?
•Am I over-cored? Would Skylake have been a better choice
•Am I future limited? Broadwell vs. Haswell vs Skylake?
•Am I under-cooled? Corsair 115 good enough?
•Do I need to get the chassis cooling option as well?
•Apollo vs Velox?
•Am I over PSU-ed? Would 750W be enough?
•Have I left out something important?

I know you are all very busy and I greatly appreciate your spending time on my question and giving me help and advice.

Hi Sanjaya - I wanted to reply to your post because we are building similar systems ( my config is no: 1527194 )
I also use AutoDesk products - 3DSMax and Inventor. I also use several rendering engines (VRay and Keyshot -both are CPU based and IRay which is GPU based) hence, my desire for the 6 core as well. I am curious why you have selected the I7-5930K vs I7-6800K, I know the single core speed is slightly faster - but even a minimal oc (to 4GHZ) on a 6800K will yield nearlythe same results at $350 savings - are there other reason you have selected the 5930? Number of PCI express lanes? For what use?

I think both you system configs would be very good with any Autodesk program. I am not familiar with FSX and Prepar3D, I use Adobe After Effects with 3DS Max.
I'd be interested in your comments.
Maybe the 1000W is overkill - but I don't know your future plans.

Thank you very much for your reply! We are very close in our rigs! Your post said 6700 but I assume you meant the 6800. When I made my config the 5930 was only $12 more. The 5930 is supposed to OC better than the early 6800s. FSX and Prepar3D are flights sims that need high single core speeds for smooth operation (4.5!). Plus the 5930 offered the 40 pcie lanes that might be useful, although at this stage I see no reason to go SLI. The 1000W power supply is probably overkill but a lot of advice I've seen suggests its wiser to have a bigger power supply that is less stressed in normal operation. However, you may be right and this may be too much even with that thought in mind.   

I re-visited the configurator and can no longer find a 5930 option - I may have missed the boat on that. I'm re-considering power supplies as well, based on your comment.
