I'm trying to decide between the corsair 240mm watercooling option, and the hydrolux PRO (cpu only) option. I'm not sure what the pro's and con's of each are. Which one tends to result in a quieter system? Which one provides better cooling? Are they roughly on par with each other, or does one provide substantially better performance in 1 (or both) of those criteria?

Custom watering cooling, as in the Pro, has a stronger pump, usually better radiator and a large reservoir. The Corsair is a sealed All In One unit with much smaller pump and no reservoir.   The Pro will keep the CPU cooler, by at least 10c and run quieter because of its flow capacity.

That said, the AIO units will cool the CPU just fine. But, the custom allows for higher overclocking for those interested and quieter.

Hope this helps.

Unless you plan to water cool the graphics cards also I would probly stick to the AIO cooler.

The PRO can be configured with different colors Drooling and you can add rads and cards later since it is an open loop system and the AIOs are not.
