I noticed the Velox I ordered uses a Corsair CX750, a somewhat low end part given the over PCs cost. That doesn't make it inherently bad, but begs the question of whether it's good enough to run two 980s in SLI mode on it.

Anyone had experience with using dual 980s in SLI with this supply?

As I say, I am not knocking Corsair, but I switched to Seasonic after issues with a (relatively) pricey Coolermaster and am now a bit paranoid about power supply reliability

michaeljhuman......If your build hasn't been started or isn't far along waiting for special orders, etc. , then you can change the psu without any extra build cost.  Cost of the psu of course. 

The 750 watt is good, but your 980 Strix do use 20-30 watts each more than reference, before you do any other oc'ing.  Still good with the 750, otherwise DS would let you know.

The EVGA 850 gold does have a much longer warranty which usually means a better unit.  Another $56 I believe. 

I haven't had the personal experience however you asked for.

I agree with Bpratt if it was just ordered and it has not moved very far I would switch to the EVGA 850 PSU in your build and pay the additional money.
