So I'm a computer newbie and was looking into upgrading my Vanquish 7 level 1 GPU (Radeon RX Vega 11). After a bit of research I realized it actually came with the CPU (AMD Ryzen 5 2400G integrated graphics)

My question is, if i got a new GPU (for instance, a nvidia one) would I need to replace the CPU too? And if not, would the Vega overrule the new one?

If you install a graphics card into the level 1, just unplug the monitor cable from the integrated graphics port and plug it into the new graphics card.   The integrated should disable with card installed.   Graphics cards usually have plastic caps protecting their DVI, DP,etc ports so remove them if necessary.

You don't have to go for the processor just install a new graphics card and you are all set to go :)
