My plans are to add 2 Evga FTW Gtx 1080's, a new 1200w psu, and a Evga FTW K X99 mobo. The only thing is, I am a bit nervous about mobo upgrading/replacing. Is the process as simple as hooking everything up again or (as I thought) much more in depth? Or, do I even need a x99? Currently I have the Asus Z170 Pro Gaming.

You don't need more than a 1000 watt psu for sli 1080.

If you change the mobo to a x99 you also need a new CPU, like the 6800k.   

The x99 gives you quad channel memory vs dualchannel on the z170.   It also allows you to get a 6 or 8 core CPU. For gaming, the z170 is better.   If you run apps like editing, that make use of the added cores, then it'll perform better but you'd have to decide if the added cost and hassle of upgrading is worth it.

So, what size psu would you suggest and will the 2 1080s bottle neck the cpu?

An 850 watt psu will do it, but, personally, I would go 1000 watt because that's me.

Bottlenecking, either processor, is always a possibility with any CPU, Gpu combo, depending on the game and how it's coded.    Reality is, unless you have a few generation older CPU or gpu in relation to the other, bottlenecking isn't the issue most think.   Maybe a few percentage points.   I don't think a 6 core CPU will give less chance of it in games.   Overclocking what you have is the best remedy.   

The 6700k is one of the best gaming chips, so any bottlenecking isn't much you can do anyways.
