I am about to upgrade my velox. I will be getting rid of my 6700k adding a 7700k. Getting rid of the Z170 Pro gaming and adding the Asus ROG Maximus IX Hero Z270 LGA1151. I already have one 1080 and I am planning on adding another. Getting a psu with 150 more watts so I will have an 850 watt. I have absolutely no idea how to go about replacing all the cables for the psu. Also I don't know how to replace the mobo and CPU. As well as how to take off the level 1 hydrolux cooler. Will I be able to call DS and get them to walk me through the process? Thanks guys.

I guess they would,but you'd need to schedule with them.   You're talking about them teaching you how to build a pc on your own over the phone.     I would suggest spending some time watching YouTube videos on each phase.   There's a video for everything.

It is straightforward, removing the video card, CPU cooler, unplugging the mobo, unscrewing it from the case standoffs and placing it on an anti static surface.   The new mobo , you would install the CPU and ram first then mount the mobo where the other came off.   Then reinstall the wiring, video card, etc.    Take pictures and keep notes on what came from where.
