Looking to upgrade my Vanquish 2 Level 1

Hi, I have $200 to upgrade my Vanquish 2 Level 1 I bought two years ago.

Specs:
AMD FX-4300
XFX R7-260x 2gb
M5A78L-M LX plus motherboard
8gb DDR3 RAM
465gb Seagate hard drive
Corsair 230T case

I mainly want to improve performance on GTA 5, The Witcher 3, and Bethesda games (Skyrim, Fallout NV). Should I be upgrading my CPU or my GPU? Which upgrades would be compatible with my motherboard/case? Thanks in advance for the help!

I personally would get the gtx 1060.  Huge bump in performance over your 260.

I'd say you upgrade your 8gb ram into 16 gb ram and your graphics card into nvidia geforce gtx 1050 ti 4gb or 1060 6gb depending on your budget :)

This sounds like a great upgrade, my only question is would a gtx 1060 and FX-4300 result in bottlenecking? If so, what should I do about it, if anything?

It probably would bottleneck, but not much you can do about it, unless you buy a new rig.   The bottle-necking isn't usually more than several percentage points in general, but not sure with that particular combo. 

The 1060 will be such a large performance upgrade, any bottlenecking  would be no big deal.   This is generally speaking, with every game different and that cpu/gpu combo an unknown to me.
