Hi Godfather.... Rig looks good but you can save some money sticking with a z170/6700k build.   The extra cores with 6800k won't do anything for games, unless you stream, edit, etc.    

16gb ram is more than enough.   

Nothing wrong with your config, but you could save some $$ .

What monitor are you using ?    If it's a1080p, a single card will do it.   Sli 1080 is good for 4k.

Similar advice that I've been given about the processor and the ram. How about 16gb of higher end ram?

Higher end ram, for the most part, are for those wishing to high end overclock them or for the looks of the heat spreaders and lights .    They are binned ic's, picked and tested for enthusiasts.   For most, ram is ram.
