What I7-CPU would be the best for video editing with Sony Vegas Pro. Currently using an I5-3570k and its a little too laggy.

The more processing power you can throw at it, the better. Video editing software makes better use of multiple cores more than just about any other off-the-shelf software out there. Try looking at the i7-5820K or the newer i7-6800K. If you have more money available, you can look at upgrading it.
