Not sure on performance, but for 2x 4870x2 you need a huge power supply.

according to http://www.overclockersclub.com/reviews/crossfire_vs_sli/24.htm the 2x 4870x2 will hit almost 950 watts at full draw. That's something you should consider as well...

1 x 275 matches the performance of 1 x 4870x2, so 3 x 275 will out perform 2 x 4870x2 easy.
