Hi Blackbeard.... Wrlcome to the forums.

Of the two builds, I' d go with build#1. For gaming and light photoshop its doubtful you'll need the X79's quad channel memory and the six core 3930k chip.   

Build # 1 is cheaper, has the latest Haswell cpu/ mobo and the gtx 780 beats the gtx680.

Thank you for the advice. This is my first serious gaming machine. I want a machine that is very capable, will be usable and upgradable for many years and a great value. I had 2 concerns:
(1) Haswell is a new chip and sometimes the manufacturer inflates the real-world capabilities.
(2) The Asus Sabertooth X79 has a limitation of 32gb of memory.

I do have one further question: THe GFX 780 is produced by a number of manufacturers. I have always purchased video cards made by EVGA. Any thoughts?

The real world testing I've seen on Haswell is about 5-15% increase in performance.    Not a game changer for a desktop, but is better, like Ivy Bridge was a little better than Sandy Bridge.  Haswell has a better idle power usage and much better integrated gpu, but that's a laptop consideration. for most.
 
I think you meant that Sabertooth X79 doesn't have the 32GB limitation of the dual channel.  The quad channel X79 has a 64GB ram limit and the Z87, dual channel, has the 32GB limit.  If you think you'll ever need over 32GB, which most don't unless you're into heavy Video editing, Maya, special effects, etc, then go with X79 setup. 
 
All reference cards are made to the same specs, but EVGA is tops in customer support.  Go EVGA if you can, but might mean more $ for special order.    If you go with the X79 build, I would, if budget allows, get the 780.  Almost Titan performance for a lot less.

Thanks again bprat22 for you input. I have another issue that I would like some comment on.
Choosing the Extreme Cooling: Air Noctua NH-D14 required me to drop the Corsair the 16 gb DDR3 1600 Dominator DHX that I originally wanted to purchase. The rep at Digital Storm informed me that the Corsair memory was to tall and would cause problems with the Noctua NH-D14.
My other choice is to obtain the H20 Stage 2 Digital Storm Vortex 120mm Radiator Liquid CPU Cooler. This will allow me to use the Corsair memory.
What are your thoughts? Is liquid cooling better that fan cooling? Are there downsides to liquid cooling?

I like air coolers more than the sealed liquid units.   But, the sealed units like Vortex have a very good reputation and work great.   I' m a bug for quiet and dependability and the Noctua offers both.   Thats me.

The Vortex/ h100i are smaller and give easier access to ram.   The Noctua is large, ovrrhangs a couple of ram slots but is quiet and just works great.

Both air and Vortex use fan cooling. Fans either cool a metal fin array or a radiator.

As far as the ram, the taller heat spreaders look nice but unless you plan on overclocking your ram, just looks.

Your choice as always.

For the video card I specified EVGA, which quite frankly the only video card maker I trust.

This is my first customized computer. I am currently using 9 year old computer powered by an Intel Pentium chip. I know the one being built by DS will be light years ahead in every category as opposed to the one I use currently.

My thank to the DS community for all your prior comments. I am looking forward to any additional comments including experience with the build process and any problem that occured upon receipt of the computer.
