will a 2x275 be ok for gaming on a 25.5 in montior in 1900x1200?

yes for 1900 x 1200 you want either

2 x 275

or

1 x 5870

size of the monitor does not matter, you go by resolution

dumb question. does it matter where i put the DVI cable with SLI? I would think not, but i'd figure i'd ask.

it has to be the first card (top card) and its first dvi slot.
