Is there really a benefit to using the 4Gb version over the 2GB version besides multiple monitors? or is Just one 4Gb card enough?

2Gb vram is all you need for single monitor.

2xNvidia gtx6802GB is still 2GB vram. The vram does not stack.

A single gtx680 2gb will max out most games on a 23" monitor at 1920x1080.  But, there are gpu hogs like Crysisi Warhead, Metro2033 for example that would need a sli setup to max out all settings.  Just turning some in game settings down would give you smooth gameplay with single card and the visual difference is small if any.

Thanks a lot I apprecite it. I was very unsure about this. I was leaning towards the 2gb anyway, so I'm glad to hear that response.
