If I want to play skyrim on Ultra settings would the 675m be able to handle it or would I have to upgrade to the 7970m?

The 675M will be able to play Skyrim  on Ultra, but, you may run into some lag during intensive sessions, a 7970M will ensure you fluid smooth game play all around. It's not necessary, but, if you want smooth FPS all the time at Ultra, it's a good investment to look into.

I think it can, 675m is a great graphics card.
