750W vs 1000W psu

what type of hardware warrants the need for a 1000w? or are 750's ok with today's builds.

also, (as per DSO's description), the 750's are "silent editions" while the 1000w aren't so much, is there an noise desparity? I'm trying to build a silent beast.

750w should be enough to SLI/XF any two NON GX2/X2 video cards, I know some brands that can take 3 Ultras in SLI (I wouldn't try it though...).  It depends alot on efficency i guess...
