Ok... Here we go.
I would like a gaming computer, a beast, which will basically keep me covered for years to come on games like Skyrim, Battlefield 3, High Graphics or Fast Paced. I don't want to spend too much money but I need to see what is what. This is what I've come up with, and I'm fairly new to this so any advice would be appreciated.

Changed i7-2700 to i7-2600k, the 2700 adds nothing.

Mobo to Deluxe. fits most needs.  Compare boards at Asus website to see if the Maximus has features you need.  Probably not and lots more $$$
 
Changed Ram speed to 1600MHz, the 2000Mhz makes no difference.
 
The 1050HX psu is tops with 7 year warranty and great for sli or cf.  The 1200W is if you wanted tri-sli , 3 gpu.
 
For cpu cooler we like air cooled, like the D14, but I left the H100 because it is showing to have good performance.  Just that air cooled like D14 are very reliable, with little to fail.  Up to you of course.
 
I change to sli 2x gtx570.  They will perform better at your resolution than a single 7970.  The single 7970 might be better if you had 2510x1600 res.   But, the 570's are at end of life and the 7970's aren't.  Tough call this close to new Nvidia cards being released in April/May, or so they say.  The 570's should last for years and every 2-3 years new gpu's are needed anyways to stay on top.
 
I dropped the chassis fan upgrade and fan controller, just noisy fans and a controller that turns down noisy fans and messes with the HafX great cooling package.
 
Same with noise suppression package...not needed.
 
The mouse, monitor, etc you can add.  I don't comment on those, except to say the Dell U2312HM are great monitors.  More money, but worth it.
