Our old computer is on its  last legs so i need one that'll last about 2yrs so i chose the below configs.  In two years i plan on purchasing a new system and this system will go to my mom.  I have a 19in. monitor and mainly play simulation games.  Just want to know will this system be sufficient enough.

Well i've played with the configurations a little and i think i'm closer now.  I guess my only concern is wether the power supply is sufficient enough.  Im also assuming that putting the raptor HD in HD slot 1 will make the OS run faster.  Thank you.

Obviously, the design is completely up to you, I just thought it was worth mentioning that I see a huge amount of overkill for a two year system that will be basically for sims... If budget isnt an issue then by all means get exactly what you want.
 
If anyone were to give me the outlines you have given, and told me to save as much money as possible, i would go with:
