Hi Riley.... That's an excellent build.
For sli 980ti in the future, I'd go with the 850watt psu for just a few bucks more. The 750watt will most likely be OK, but most sites recommend 800watt minimum. Not much more for decent headroom. Stage 2 DS might not do. They go for stability and the added small bump in speed, 4.3 vs 4.5 for example, isn't very noticable. Good luck.
