What exactly is benchmarking, and what does it for my comp. Is it worth it, in other words, to spend the extra $45 to get it?

As DST said, it is software that rates/scores your system. It is a good idea to run some benchmarks periodically, especially after making any upgrades to make sure everything is working as well as it could be. Also good for bragging rights ).
 
I primarily use PCMark05 and 3DMark06 from Futuremark. The basic versions of these are free and can be downloaded from the site below.

3DMark06
 
Futuremark's newest versions are PCMark Vantage and 3DMark Vantage, but the free version only lets you run it once. If you got the benchmarking tools you will get the pay version of one of the Futuremark products, depending on which one was selected.

You can also use the benchmarking to rate and test your overclocking. I use Vantage a lot when I was OCing the 280s trying to find just the right about of performance vs heat. While i could go as high as 730core before artifacts started to show up, i settled for 705, mostly because anything above that the heat was getting to a point where it just wasnt worthwhile to stress them for those few extra meaningless FPS
