I'm pretty okay deciding on most parts of the PC but one that has always given me hesitation is the motherboard. I know they have a default (most popular) option but I want anyones advice on which is best. I won't be doing SLI but want to be able to hook up a few SSD's, NVMe drives.

Any suggestions or advice would be great... like how many PCI-E slots do I need etc. etc.

On my Lumos I went with the ASUS ROG Strix Z390-H Gaming
Motherboard. I wanted to have 2 M2 SSD ports. And I did want to have the ability to go to SLI in the future if I wanted to. An additional $47.00 USD was not an issue.

You should know that the default mobo is not the most popular...just the least expensive entry level board.

As Nomad said, I would recommend the Asus Z390 ROG Strix-H ATX full feature mobo, or if you require WIFI use the MSI Z390 Gaming Pro Carbon ATX full feature mobo.    Both have all the M.2 ports (2) and PCIE slots (3) you will ever need.

Solid, well-featured boards.

But I think it's most popular at DS just because so many folks don't put as much thought into the choice you have!
