Hey guys, I feel like I'm turning into a regular here. This is probably my ultimate build. Can I run 2 monitors at 1920x1080 resolution with this build? Can I run 3?

Yes to both questions. 2 and 3 monitor is fine.    Not sure the games and fps., but it can be done no problem.

You don't really need the Temperature Display + if you are going with 16GB of RAM, I'd go for Professional. Also the Blue LED fans aren't needed.

Yep...what Astrotechnics said. 
Your other builds didn't have the LED fan upgrade and fan/temp control and that was a good thing.  All the fans do is mess with a great case and the temp control isn't accurate.  It does look nice, so for aesthetics it's good but not function.
