Hi lanthier....   That is a real nice rig.  The X79 quad channel memory mobo and 6 core i7-3930k chip is made for your apps.  Wider ram bandwidth and a faster processor.
 
I would however pick a different case.  The 550D case is a nice looking case and quieter than others but its a closed up case with acoustic panels covering the side and top for noise deadening.  Problem is, it only has 2x 120mm fans in front and a rear 120mm fan.  With the sli gtx 680's I believe under heavy load for hours, heat will build and the cards will go to high rpm as they struggle for cooling air.  Video cards on high rpm can be noisy.
 
The HafX is the best air cooled case here with a front 230mm fan and top and side 200mm fans, all moving slow, pushing lots of air and their low rpm keeps them quiet.
 
The ram can be changed to 1600Mhz.  Doubtful you'd see the difference in speed and the higher clock can contribute to overclocking instability. 
 
I put in the sli, 2x gtx 670 because they are within 5-10% of the 680's in gaming and cheaper in price.  For medium gaming, a single gtx 670 or 680 might be all you need, unless you game on multi monitors or 30" higher resolution.  Depends if max settings for all games is needed or not.
 
I put in the Noctua D14 air cooler.  Its quiet, cools great and its big block of cooling fins leaves little to go wrong.

Hope this helps.  Your build is great and mine gives better cooling for stressed usage over longer periods.  Either will work as DS does check for thermals, etc during testing.  A case's primary job is to keep things cool, imho.

Thanks so much for the input. I went with the 680 video cards for video editing and photoshop work. Not sure that those apps per se benefit a lot from increased capability of those newer model 680s, I tend to buy for the future and get longevity from the machines I configure. I will look into case, I wanted something a bit smaller than what I currently have...
