What is the core difference between a PRO and an Extreme and what reason would you have, if any, to go with a PRO over an Extreme? I understand the Extreme has good cooling but what about the cooling on a PRO?

The Extreme isn't just good cooling. The Pro case has good cooling. The Extreme case has excellent cooling. The only real reason to select a Pro over an Extreme is price.
 
If you look at the Extreme case, you will notice a set of baffles just forward of the case window. These route cool air to the interior of the case, but split the intake so that the air is not directed through the warm HDD cages before it's used to cool the rest of your system.
 
This has the effect of keeping both areas cooler with less fan effort than would be possible in most cases, including the Pro case. There is also a difference in construction between the two. The Extreme case has a 2mm Aluminum body and a 5mm aluminum front plate, while the Pro's body is comprised of .8mm SECC.
 
Don't get me wrong, the Pro case is by no means a cheaply made case, it's a very good value for the dollar, but it's not in the same league as an Extreme or Ultra, both of which support additional fan mounts beyond the two stock 120mm fans.

To me, the PRO is stylish in an understated kind of way. It was my initial first choice. The EXTREME looks like it was made in the Ural Mountains by a factory that used to make Soviet tanks. It's brutish looking and utilitarian, which I like. It's also considerably larger and more expensive than the PRO. I was told by DSO that it was easier to put Nvidia 8800 cards in the EXTREME. I eventually bought an EXTREME. The only thing I don't love about the EXTREME is the big air grill on top which lets heat escape and can take two 120mm fans, but which also lets noise out and spilled drinks in....

Out of curiosity Bill, what sort of temps do you get idle and under load with that case, if you don't mind me asking?

Originally i went with the Pro too since it's cheaper Smile but i changed my mind after talking to Alex about adding another HDD in the Pro case. With a 8800GTS card in the case i was told that i can only install 3 HDD and that's it. With the Pro case you don't have lots of room to work if you want to add more components later on. I am glad i go with the Extreme case case since this is the best case i have ever use. It's big enough that you won't have problems with heat build-up, you can have up to 6 HDD and the cooling options ( up to 5 120mm Fans ) is just great.

The BIOS Monitor says CPU = 40 C, Board = 29 C, and MCP = 46 C. This is for a stock clocked E6850 with a 8800 GTS. Ambient room temp feels a tad warm right not; maybe 10 - 15 F cooler than the Board

I'm in the process of coming up with a configuration with a budget that I can tell the truth to my wife Wink.  Would like to have 2 raptors and a 750GB drive.  From all the good posts about DS I believe I can request that the drives be mounted with a blank bay between them.

"Nothing" sounds so cheap for a $260 case.... The Marketing folks would prefer that you describe it as "constant exposure to massive flow of ambient temperature air via two passive ventilation grids".
 
In fact, there is a mounting bracket for a 120mm fan between the two removable SATA drive cages. Maybe with all six drives installed you might want it (the fan), but with just a couple of drives the interior of the cages is a room temperature.

The drives won't get very hot and it get cool air coming from outside throught the mesh grilled section. You can also add a 120mm fan in between the HDD cage too. There is a fan bracket in there.

Sure, have the Raptors live "downstairs" with an empty drive position between them and put the 750 "upstairs" all by itself.
 
DSO configured my machine with the two drives adjacent to each other in the bottom bay.
