I am going to order a new rig from DS soon and I am unsure if I want to get am ATI 2 5870's or 5970 card for Eyefinity or just get a Nvidia GTX 480 card.

Im using the computer mostly for gaming and music so any comments would be great.

You could always just get two 480s for the same thing, but with more GPU horsepower? Each 480 supports up to 2 monitors each.

I believe Nvidia's version is called Nvidia Surround.

Ok If I go with Nvidia what would you suggest in SLI mode the GTX 480's, 470's, or 460's.

Well if you are planning on playing games on 3 monitors with Nvidia Surround then definitely two 480s.

A single 480 does a 1920x1080 resolution nicely for most all games, but play a game on three 1920x1080 monitors and suddenly you're talking about playing a game at 5760x1080, which is a bitch and a half, even two 480s would be struggling with that.
