Should I get one overclocked GTX 780 ti 3gb or should I get two GTX 780 ti 3gb for my system? If I get them which one will require more cooling?

You can see the benchmarks we did here.
NVIDIA GTX 780Ti Overclocking SLI Benchmarks

Cooling will not be an issue on the reference cooler, however, fan speeds may need to be cranked up if you do decided to go heavy on the overclock. Otherwise, the 780Ti can handle overclocks pretty well.

If you mean, what is more performance, then a sli 780 is much greater than single oc 780 Ti.    Assuming you need a sli 780.

Go big or go home. Get two 780 Ti's put them under water and push them to the max... or if you really want to join the big boys club, quad sli.
