I am pretty much going to purchase my system today but have one more final question and it has to do with the hard drives.
I can go with either one of these setups:
2x 250gb HDs in RAID 0
or 2x 150gb 10k raptors in RAID 0 and a 160gb for storage
Am I going to really see a big difference in having the raptors in RAID 0 over the two 250gb hdds in RAID 0?
or would it be fine to go with one 150gb raptor and another drive for storage something like 160gb

It depends on person to person tastes. I used both types of setups. The Raid 0 setup of Raptor drives always feels more zippy. If you have the budget for it, get it! However, if you have a low-end video card or processor selected, use that money towards a upgrade for those items. Fast hard drives are nice, but, they wont increase your FPS during gameplay. Only speed up load times.
