Home Media Server

Usage:
I have 6-8 TB of DVDs that I own and have ripped to iso files that I currently use on my different computers in XBMC. I'd like to set up a home media server using Plex that will serve 4-5 TVs in the house, plus some computers and mobile devices over the internet. It will thus have to have high network throughput and be able to serve up a few different movies / internet streams simultaneously. I might actually run my home theater off this computer itself if need be, but if it is easier to just have this be a streaming box and have the home theater run off of a Roku box or something else, that's fine and that may mean that this doesn't need any significant video card.

Special Needs:
I'd like to have a RAID configuration on my data drives to make sure we don't lose any of the discs that we've ripped. If it will be worthwhile, I might run the OS and programs off of an SSD.

Reading the difference between Sandy Bridge and Ivy Bridge, it seems like Ivy Bridge has a significant transcoding advantage when compared to an external GPU. (hothardware DOT com/Reviews/Intel-Core-i73770K-Ivy-Bridge-Processor-Review/?page=12) Does anyone have experience with that? How does that compare to the dual Xeon configuration I have here?
