How does this build look?

I am want a gaming PC that will hopefully go the next 3yrs or so running the newest games.  I'm planning on running on a Dell 24" monitor.  Will I have trouble keep 2 8800GT's cool.  Is there such thing as stage 3 air cooling (I dont see that option)  Are the 680 motherboards available?  OR should I wait for the 780's?

Did I miss anything?  Any change suggestions?  My budget is under approx 2-3k

Stage 3 air cooling is stage 2 with processor overclocked.
 
Looks like you have a nice system there man.
 
Do you want the keyboard/mouse ?
 
I got the G15/G7 and they are amazing in my opinion.
 
Thats similar to my system but I went with E6850 overclocked to 3.5 and its ridiculously fast.. im sure yours will be too :P
 
If you really wanted you could downgrade your power supply, but if you plan on upgrading it, leaving it at 850 is fine.

Stage 2 cooling takes care of the CPU, but for the Graphic cards I'd recommend requesting 2-3 extra fans in the case ($10 each, and with the case you selected I believe you can have a total of 6). Also once you get the order, use a program such as rivatuner to change the fan settings on the cards from 25% to 75% at least.

You don't need to wait for the 780 unless you're going to go Tri-SLI with GTX/ULTRA's or if you plan on getting one of the 45nm quads coming out in january.

Sundowner, you're right, the 780i Motherboard just handle the Tri-SLI with GTX/ULTRA's and intel QX9650 CPU.

If your rig doesn't need Tri-SLI with GTX/ULTRA's and intel QX9650 CPU. You don't have to wait for 780i Motherboard.

Looks good. I also went with an overclocked e6850 and the thing is a monster, but there's a case to be made for quads as well, so that's kind of a wash.

I'm not a big fan of SLI, so this may impact my advice, but I would put one GTX in, and when the next gen of cards is released, get a second GTX on the cheap and SLI it then.

Looks like a good build to me. You could save yourself $25 by going with one optical drive. I'm also not a big fan of SLI, but you do have a high performance setup. So I wouldn't necessarily say you're better off going with one video card. Though you could get away with one 8800GTX for a bit less. Oh, and we have plenty of the 680i's in stock. Both A1 and LT.

does adding the 10k rpm hd  to put the OS on add much performance?  I don't know much about it but it sounds cool  LOL

It does increase the performance, but by how much is a matter of debate. Some will say it's a huge difference, others will say it's barely noticeable. I think it depends mostly on what operating system and what kind of apps you're running.
