My dual gtx 480 system is currently just using my old 24" dell monitor.
Dell currently has a nice deal for their new 30" U3011 monitor, so I just ordered it.
These 2 coupon codes will save you 25% and then 10% and free shipping, making the $1500 monitor cose about $1000. And the codes reduce the cost of the extra warranties you add on (codes: P?XSB2$8XSH3M3, JW77Q0NTPXR$0K).
So, how should I set up the new 30" monitor on my dual sli 480s? Do I just plug it into the same main video card that has the 24" monitor? Or do I need to do something special to use 2 monitors at once and still have SLI? I'm using Windows 7 ultimate.

As far as I remember you just plug them both into the primary GPU. If you want to add a third then thats when you'd use the second GPU.

same video card, the video port closer to the closed side of your case, or the back, will default as your primary video port
make sure you are using dual link dvi cables
