I'm not a gamer, but I do enjoy an occasional flight simulation. Primarily needed a replacement PC for some video editing, word processing, email, etc. I don't plan to overclock, but want the capability if I change my mind later. Expert input appreciated.

expert input #1: if overclocking doesnt interest you, i wouldnt pay extra for an overclocking specific chip. an 860 is fine for this build
 
the mobo you chose is pretty weak, def worth going up to the evga p55 sli (not micro)
 
id avoid raid anything unless you have some pretty specific reasons for it
 
overclocking or not, the noctua u12p is the superior air cooler under stage 3 (real liquid cooling)
 
regardless of your use, not overclocking is just wasting money, and for video editing and flight sims, you need to anyway

If you are working with high def, more ram is important, no reason not to get the free overclock.
