I currently have an i7 9700k with rtx 2060 super sc and a 600w psu. Was wondering if my 600w would be enough if I was to upgrade to an evga rtx 2070 super (preferably xc version)

600 watts is fine. The TDP combined of both the CPU and GPU is 225 watts. Even with overclocking you will have sufficient capacity. The product specs for the 2070 XC recommend a 550 watt PSU. Here is a link to that spec:

So are you saying I'm good to replace my 2060 with the 2070 super xc? How about the 2070 super xc ultra? Would it make any difference?

According to EVGA, you should be fine with the 2070 XC Ultra:

I was referring to the evga 2070 "super" xc ultra?

According to EVGA, your 600 watt PSU won't be enough. You will need at least a 650 watt PSU. Keep in mind the TDP for this card is 215 watts. If you don't push the overclock, your 600 watt PSU could handle it.
