I don't have near the technical knowledge some of the other forum members have, but I've been doing my level best to keep up, and learn as much as possible. As I understand it, the performance gains in going from 800Mhz to 1066Mhz on the RAM speed are pretty minimal, as 800Mhz RAM has an unmultiplied speed of 400Mhz, and the CPU's, being quad pumped, would have to exceed a front side bus speed of 1600Mhz before bottlenecking at the RAM.
Given that, I might opt to move to 800Mhz RAM, and bump the 750W PSU to an 850W model, which should give you more available choices in terms of future upgrade.
Other than that one, minor change, that config is pretty close to what I would do with a similar budget. Changed, or not changed, that is going to be one screamin fast rig.

Your config look great, the 750W Power Supply is good for single or dual 2x8800GTS Video card... And the Dominator Ram is high Performance overclocking for Quad Core CPU.

personally I'd get only one Hard-drive and one optical drive, and get a GTX instead.
