Ok, here is the config I am looking at. Will buy the system on March 18th if Sandy bridge is back in town. Also might upgrade to the new 250gb intel ssd coming out soon.
 
Cooling question: Will the default fans of the HAF 922 and the Noctua NH-U12P 
 be plenty enough?
 
I plan to stay with one gpu for this computer; maybe upgrade to a better single gpu down the road.
Using 6970 so I can play games at 2560x1600 when possible.

You did a good job, I got nothing to change, you picked all the right parts, the only thing I'm gonna point out is that for 2560 x 1600 res, you gonna want at least cf 6970, the get smooth gaming at highest settings, and even with that some games will not be smooth.

for dual cf and higher x58 platform or the new line of SB chips coming out Q4 of this year would be ideal, but thats if you want tri sli/cf.

the 922 will do a great job, I'm not sure if the ones here come with the side 200mm fan or not, if not then specifically ask them for it (not the fan upgrade):

haf 200mm non led fan
