Try this if one 1080ti doesn't cut it for you, you can just add a second for sli

My pleasure its been a while since I have checked out dual monitors, but I'm think you should get 70fps or better with the 1080ti , and the build has enough power to support sli 1080 ti should you need/want it.

Ram is cheap so if you think 32gb is good then go with that

Change your case to velox if you can and ask them to put the h155i on top.

In my experience and others may disagree but I have to go with my experience.

best place to put a rad for cooling is on top so that it sucks the warm air rising right out of the case.

some cases here the rad doesn't fit on top so you endup with rad in the front either blowing in warm air and allowing top/rear fans suck it out or rad is in the front sucking air out.

the velox will let you put the h115i on top where as lumos might not even fit the h115i and you have to go with older model h110i and it could be in the front.
