I think you should go with the gpu upgrade first, worst case senario you can put it in your new rig.

what res you gaming at and what kind of games are you trying to run at that res?

The thing is though, I want to run my new CPU on my 42'' plasma that is 1080p and I would kind of like the HDMI for audio and what not.

Would an upgrade to a gtx460 or a ati 5770 fit where 1 of my 8800's are?

No such thing as future proof, the best way to be future proof is to buy future gpus so that you can take care of future needs.

at that res I would go with a 570 gtx, for wow, its more th enough, same for rift, see if diablo will need a second or not, if it does then drop in a second, I think you will be fine with one 570 tho.

Perhaps consider the Gtx 560 which is due out in about a week. For WoW, your CPU is your limiting factor in raids and in larger cities, and it determines your MINIMUM fps. A higher end graphics card allows you to turn the in game graphics settings and AA up, but will have little impact on raiding. It also determines your maximum fps in open world questing scenarios, but your monitor likely has a 60hz refresh rate so those excess frames are wasted.
For reference, even the lower end 768mb version of the 460 graphics card will be CPU bottlenecked up to 1920x1200 resolution.
Also keep in mind WoW does not take advantage of SLI so one of your 8800 cards is not being utilized at this point in time.

Please note that all of this information above concerns WoW.
For newer titles they will benefit much more from a higher end graphics card.
