[About $2500]

Expectations:
[Dual Samsung Syncmaster monitors about 21"]

Usage:
[work and play -
Work currently using AutoCAD (no 3d rendering), and at least 2 other applications on both screens all the time - some photoshop/illustrator, marking PDFs, streaming music/video, etc.
gaming side - diablo3, maybe some GW2, some other game if I get time]

Special Needs:
[I currently have 500GB stored]

Specifications:
[ODE V2 Level 4]

I am not a hard core gamer, but I need a good stable system to use at least 10hrs a day.

I like Nvidia graphics cards over the other brand.

Is the ODE Level 4 over-kill for me?
Will the SLI be really useful?
I don't mind picking a system that is pre-configured.

My current system has an Intel i& 920 2.67 with only 3gb RAM and a Nvidia 285 GTX - it is getting old and doesn't like all the multiple programs any more :)

For a dual monitor at 1920x1080 resolution the ODE lvl 4 wouldn't be overkill.  Of course it all depends on the games and the settings, whether high or maxed out, that you would be playing with.
 
A single 670 for each monitor is a safe bet.  You still won't max out all games but the ones you mentioned shouldn't be a problem.
