I am brand new to this computer stuff. I have never really gamed on a computer before but I do want to get into it. I also edit videos for YouTube so I need something that can do that as well. I am planning to have three monitors, so I need something that can support that as well.

Budget: Under $1,200

Any advise would be awesome! Thanks!

You could change the i7-6700 cpu for the i5-6500 and stay under budget but the i7 will perform better for your needs.  Either will work.

You didn't mention the monitor resolution, but the gtx 1060 is very good for 1080p at med to high gaming.  Most if not all graphics cards support multi monitor.

Thanks for the helpful advise!

I just want to check a little bit more on the monitors. I am planning to have a:

(x1) LG 25UM58-P 25-Inch 21:9 UltraWide IPS Monitor with Screen Split in the middle
and
(x2) ASUS VS248H-P 24" Full HD 1920x1080 2ms HDMI DVI VGA Back-lit LED Monitor on the outside

Will these work with that particular configuration?

The video cards typically have a DVI, 2x HDMI and 2x DisplayPort ports to connect monitors to.   But they're not all the same. Worse case you get a dvi to hdmi adapter, etc to match your monitor to the card.   

Just an FYI....the more monitors are being used at once, the lower the gaming frame rate because the video cards workload to render increases.
