You can't do tri sli on the p67 platform, well you can but you won't get tri sli performance.
for your res we recommend dual sli with option to go tri sli, but your sli can be sli 570 2.5GB, sli 580 3GB, or cf 6970 2GB. all of those will do great and you can throw in a third down the road for a bit more power, but like I said, you don't want to do that on the p67 since the third card will be pretty much wasted since its pci lane will be at x4. The highend platform of the SB is x79, it will be out Q4 of this year but from what I hear, it would have all its capabilities till Q1 of 2012. you can always go with the last platform, which is not as powerful, and its performance is not as good as the new platform and the 2600k. so on your config the 1200w psu, maximus mobo, the third gpu, are all a waste, also you need to go with 3GB versions of the 580 if you gonna go 580, and go with stage 2 oc on the 2600k.
