I primarily play MMORPGs, Elder Scrolls Online is my main game, as well as beta tester for New World. Both are known as resource hogs. ESO uses a lot of CPU, and also has some performance issues in pvp that I know I can't fix...but people have said that running with 32 RAM helps with some of the issues. I have a dream of one day not having to turn off shadowing, water reflections, etc, to be competitive in PvP, as these games are beautiful.

Also I play games like The Witcher, Dark Souls, and will be playing Cyberpunk. I currently have an ASUS Tuf Monitor and run 1080, but would like to upgrade to 1440p.

You won't get anything for gaming from the 5900X over the 5800X. All the newer processors with more than 8 cores are overpowered for gaming, and don't bring anything. I would get the 5800X. Then, with the discount you're a lot closer to budget.
