This is as inexpensive as you can get for what you want. Comes in at $1823 after discount. Getting to the $2000 plateau gets an extra $100 off which pays for all but $18 of the extra 16GB of RAM. That will be of great benefit for both editing and streaming. The up to 5x speed (over the SATA DS SSD) of the Seagate Firecuda SSD is a no-brainer, and helps get to the $2000 plateau.

Thanks. If I wanted to take it up a notch from here after adding the dual fans what do you suggest or the above is good?

Upgrade to the i9-9900K for $112. Natively, it's no faster than the 9700k, but it has eight more threads for parallel computing the 9700k can't match. More computing power is in your wheelhouse. For gamers, it's not much improvement. Get the dual fan cooler and the mild overclock for that one.
Next, I would want the Corsair 850W power supply for future proofing and its 10 year warranty, but the CPU upgrade would be first choice.

Here is a comparable (parametric) build from PCPartpicker. I am providing it here to just give you context. Video editing and streaming can be core intensive. It's also unclear if you need a capture card to take your console gaming stream to your PC. You also will need to consider getting a WiFI antenna if you don't have ethernet available.

Your build looks fine. Comes in at $1850, yes? The 3700x is about 94% of the 9900K, and the savings gets you all that nice storage! IMO, the GTX 1660 should meet your needs, and you got your 32GB of RAM and the better cooler. What's not to like?
GrandesBollas makes a good point about a capture card and a Wi-Fi antenna. Some Wi-Fi choices are available under "Internet/Network Access", but the Configurator doesn't offer capture cards. You could ask DS about that, but I don't think they offer them. Good luck to you!
