Okay, here is my latest configuration.  I know this is a little over the top, but I want to play games with all the eye candy on with a 24" monitor. Plus, my computer sits upstairs where it gets very warm, especially in the summer.  About 85 degrees before the computer is turned on, and that is why I have the water cooling.  I would like to have left it out because I like simple, but right now I can only use my computer for gaming in the winter and that is ridiculous.  I do a lot of gaming, plus photography with some adobe programs, plus the usual stuff.  I was going to go with one video card and upgrade later, but why?  I don't like tweaking and fiddling.  I like to get it set up and then use it, hopefully with little or no problems.  I am concerned the 1000w power supply will not be enough with two of the big GTX 295's.  As for the OS, I will upgrade to Windows 7 when it comes out, IF it is an improvement over Vista.  So, what do you think?

What DST just posted for ya is almost exactly what I ordered for myself last week. It looks like he dropped you down to a single 295GTX since you aren't gaming at 2560x1600... and you could always add a second 295GTX down the line if you switch over to a 30" monitor. Suppose you could change the DVD to a Lightscribe... but really no need..

That'll be one beasty rig. Ermm

Thanks DST4ME!  I do have a couple of questions...why no water cooling for the video card?  The temps get unreal here in the summer.  Plus, why the change in hard drives? 
Also, I did not choose 64 bit because Adobe Photoshop Elements isn't 64 bit compatible. I love to game, but my techie skills are on the lighter side and I have heard of lots of people still struggling to get everything to run on 64 bit.

LC on the cards means, anytime something goes wrong you will need to send it to DS to fix, and also if you want to upgrade. if you don't mind that then go with LC on gpu.

1TB HDD is too big to manage, scan etc, the veloci is faster.

there are very few things that don't run on 64bit however, you can install it as a 32bit app, vista 64bit has a folder for 64bit apps and one for 32bit apps, most apps run in the 32bit.

or you can install something like vmwareand then install xp in it and run your adobe out of that, and you would be doing all that right from your vista desktop.

I know what you are saying about the LC on the gpu's.  I thought about that, but honestly, there is no one around here who can work on a gaming rig even if it didn't have LC.  I had some one help me build the gaming rig I have now and a few years later when I wanted to get a new video card put in(my computer friend was busy with his software design career and couldn't help me anymore, sniff), I took it to a famous electronics store with a computer repair center.  When i got it back, it was all messed up and I had to fix it myself,  If you knew how slight my tech skills were, that would frighten you.  That is one of the major reasons I am going with DS this time.
Thanks for all the help!!!  I am going back and doing some reconfiguring and hopefully have my order in today.  Look out Crysis, here I come.....

gigi, replacing/adding ram or gpu is very easy, and I mean very easy, a 12 year old can do it.

I'm sure if we showed you, then you would realize how easy it is.

its just a matter of disconnecting the power, pulling the card out, put the new card back in, plug the power cable/s.
