Organizing my HDs

This isn't really a hardware or software question I don't think. I guess it's kind of software, but oh well, I'm putting it here.

So I have 3 HDs now... the 80 ssd and two regular HDs. I want to only have windows and a couple games on the SSD, all my data on one of the second ones and then the third one for backup.

Here are my questions:

1) What files can I not move from the C drive? I obviously don't want to break windows but I want to get -everything- out of the drive that isn't necessary.

2) Is there any way to make my other drive the automatic install drive like C is right now? I assume the answer to this is no, but I figured it was worth asking.

3) If the answer to #2 is no, what would be the best procedure for installing things and moving them. Simply installing, dragging the file from the C to the other drive and having it copy, followed by deleting on the C drive?
