If you want only the very best at 2K, the 3080 is insurance that you will always get the highest framerates. The 3070 is about the power of a 2080Ti, and would probably get you max frames in most everything, but you also would probably encounter a few that might top out under 165 at the highest settings.
The PSU is definitely overkill, but it's subsidized by helping you hit $3000 exactly for an extra $100 off. That puts you actually +$12 to the good, so.... Everything else is just how I'd get it! To make both changes, you would be at $2492 versus $2700. the better card costs you $208, net. Cheap as I am, I just might go for it.

This'll probably be worth it in the end so I'm going to go for this... unless something better and budget friendly comes up in the few months that I'm going to save up for this, after all new technology is always around the corner.

IDK about budget friendly, because it remains to be seen how DS prices things out, but the Zen 3 Ryzen 5000 PCUs hit two days ago, and you can bet they are superior to anything on the market now. They will be price competitive with the same class of proc from the Ryzen 3000 series. Another thing to consider is AMD is also coming with "Big Navi" GPUs that compete with the new Nvidias. There is a synergy built in between an AMD 5000 proc and the new video cards that enhances their base performance and may make the combo stronger than any other build.
Also, Intel is coming with new CPUs and PCIE Gen 4 support after the New Year. Lots to be aware of and ponder before you buy. It would seem likely if you are saving up, the build you so thoughtfully put together will not be parts you can even get here by Xmas.

Lol, I am thinking of building my own pc, but the problem is that I do not want to deal with cable management and RGB xd. So excited for PCIE Gen 4 support on intel
