Please help me with my new rig configuration.

This rig will be for major photo editing.  Photoshop CS3, Lightroom, light video editing, email, net surfing and transfer of photo files.  No gaming....2-3 monitors.

2 & 3 HD will be mirrored

Possible fourth hard drive for swap file?

from my understanding if you went with 4GB of ram and your OS is only 32 bit you wont see the full 4 gigs of ram.  I recommend going to 2 gigs of ram or going to a 64 bit OS.
 
I am also fairly confident you over did it with the power supply, unless you plan on doing some massive upgrades in the future.

   Photo editing or video related tasks need a really really fast multicore cpu and lots of hard drive space.
 
   Get the fastest Quad-core cpu you can buy, a 750W power supply is plenty even if you want to run SLI later. Not sure why you want a 250GB and 750GB set up as a Raid 1 and leave the other 750GB all by itself ??? Raid 1 is not a good option for data backup because if one drive in the array has a virus, the others will have the same virus too. Use an image program to backup your data instead.
 
   Don't really need a separate hard drive for swap file. You can put a portion of the swap file on all your HDDs except the drive where the OS reside will speed up your system a bit. Better yet, go with a Raid 0 array--- much better for photo and video editing tasks.
 
   How about a 250GB for Window and 2 x 750GB in Raid 0 for all your video/photo programs and datas ?
