So I have a 3060 in my current PC and I just got another 3060. My power supply is a 600w directly from digital storm. I was wondering if that enough to power both SAFELY, even when keeping it on for 24/7. I have a z590P motherboard.

You don't mention CPU, but I don't think a 600 watts will quite cover that config anyway. You can enter your system's details in the following calculator:

OuterVision Power Supply Calculator

Just remember, even if fairly close, the calculator's result is still just an estimate. Also, the calculator doesn't account for brief consumption spikes. For example, (at stock) the Core i7 in the system in my signature has used upwards of 217 watts, averages ~180 watts under full load (the TDP rating is 125 watts).

Which is why I'd recommend at least a 10% max power headroom.
