The 480 uses a 6 pin and 8 pin connector from the PSU. Since I'm not an electrician, would it be okay to use a 6 pin to 8 pin molex adapter (extension) for connection to the GPU? Would there be any load issues?
Something like this: http://www.pcpower.com/accessories/6-to-8-pin-adapter.html
Look good?

I used molex to power my GTX 295, so it's fine.

six pin PCIe has 3 12V + 3 12V- wires, most companies power supplies on 8 pin Pcie have the same 3 + 3, but add "sensing" wires. so really an 8 pin PCIE will not supply any more power than a 6 pin, but some power supplies do it different. The 8 pin that powers the CPU, is 4 12V+ and 4 12V - so different animal there. so your adapter for 6 pin Pcie to 8 pin Pcie will work fine, there is also adapter for two Molex's into an Pcie. Usually a molex is reffer to a flat conector with 4 wires, a 12V + a 5V+ and two grounds.
