You want to do something that's usually referred to as a spending notification.
 
Unfortunately, all this does it put a note on your account.  They can still put a hold on the purchase if it is far enough outside your spending patterns.  I'd say it helps 80% of the time unless you're using a card that rarely gets used for online purchases or is solely done for things like groceries and gas.
 
Here's a fun way to get a hold put on your card - go to a gas station and use it to pay at the pump.  Then go a jewelry or electronics store.  99 times out of 100, they'll put a hold on it.  One of the easiest ways to see if a credit card is still good is to use it where they aren't going to check your ID - a pay at the pump.  Verifying that it's good, a dumb thief will then go try to use it for something big.
